Gastronomy students in Split and Zagreb have designed a real holiday cookbook with traditional Christmas recipes from their regions.
The cookbook includes various dishes, including: Istrian žgvacet with fuži, rabbit with steamed dumplings, cod stew, salt fritters, traditional Varaždin rolls, tuna fish with mlinci, Sinjski arambašići, strudel with biscuits and many others.
Aspira’s holiday cookbook was made very spontaneously. When we came up with the idea, we contacted our students, gave them complete freedom in creating meals and after just a few days we were ready to cook in our culinary practicum.
Our intention was to share our knowledge with you, bring traditional recipes from all over Croatia to every household and refine them at the level of professional cuisine and this way help in creating your Christmas. I believe we have succeeded in this and I hope you enjoy preparing and enjoying our holiday dishes in the company of your loved ones.
I thank all my colleagues and our students for the exceptional effort, idea, initiative and implementation, good spirit and atmosphere that filled Aspira in Split and Zagreb during designing, preparing and photographing the dishes.
In the end, I wish you all warm and loving holidays and happy new 2021- said Alen Jerkunica, the dean of Aspira University College.
