On December 9, students enrolled into the Gastronomy study programme, under the leadership of Mr Tonči Drlje, attended a one-day workshop at the Stella Croatia production-education complex in Klis, owned by the Polić family.
The culinary workshop, the topic of which was seafood, was hosted by our lecturer, chef Braco Sanjin, accompanied by his colleague, chef Damir Modrušan.
Chef Modrušan is known in Istria as the “truffle king”. His knowledge and skills in preparing truffles, and in using them in dishes, earned him this lofty title. Apart from his culinary successes, his daughter is definitely an exceptional achievement. We are proud to have Ms Debora Modrušan, who got her love for cooking from her father, as a student of the international Gastronomy study programme.
Prior to the workshop, the students took a tour of the complex where authentic Dalmatian delicacies are made. They are known for their excellent olive oil, pastries, jams, liqueurs and biscuits. Their mission is to honour their cultural heritage by preserving traditional recipes which they prepare in accordance with modern standards.
